Tropical Pizza Recipe

What I’m about to say might sound crazy, but I’m not that into “normal” pizza. Of course it’s good, but after having pesto or alfredo sauce as a pizza base, tomato sauce just doesn’t do it for me anymore.

I’m also a HUGE lover of pineapples on my pizza! So once I tried a pizza with a pesto base and loaded it up with pineapples, I could never go back to normal pizza ever again! Which birthed my “Tropical Pizza” recipe.

All you’ll need is:

  • Pizza dough or pre-made crust
  • Vegan kale, cashew, and basil pesto sauce
  • Pineapples (sliced)
  • Tomatoes (sliced)
  • Green bell peppers (sliced)
  • Green onions (chopped)
  • Baby spinach (chopped)
  • Coconut oil
  • Minced garlic

*Everything was purchased from Trader Joe’s!

And in case you were wondering, you read correctly! There is no cheese on this pizza, not even vegan cheese. I find this pizza much better without cheese but if you’d like to add it, I’m sure it’ll still be good!

Building the Masterpiece

I always bought pizza dough from Trader Joe’s, but after trying their pre-made pizza crust (not frozen), it’s been my first choice. It’s so good and you don’t have to do anything! Just load the pizza up with the toppings.

I start by applying coconut oil around the crust of the pizza and then top it off with minced garlic.

I used coconut oil because it was all that was available at the time. It worked really well! I didn’t notice a difference at all from using olive oil, assuming so because the pineapples already make the pizza taste sweet.

Next, add the layer of pesto sauce. Get as generous as you’d like!

Then it’s time to add the sliced tomatoes, bell peppers, and green onions. You can dice them up too, I just prefer them bigger. it gives the pizza a certain ~aesthetic~

And time for the best part of all… load the pizza up with a plethora of pineapples! I’m talking at least one or two slices per bite! You won’t regret it.

Sprinkle the chopped spinach on top and place the pizza in the oven for about 10 minutes.

Et voila! There you have your tropical pizza. If you like pineapples, you’re definitely going to want to try this. Let me know if you do and what you think of it!

Happy cooking!
