Spinach Orzo Pasta Salad

I love love love pasta salads and this easy recipe has become a new go-to.

All you’ll need is:

  • Orzo pasta
  • Spinach*
  • Celery*
  • Shaved carrots
  • Green onions
  • Cucumber*
  • Tomato on the vine*
  • Asparagus
  • Minced garlic
  • Rosé vinaigrette
  • Cold-pressed extra virgin olive oil
  • Sunflower seeds
  • Salt, pepper, paprika, everything but the bagel seasoning

First, soak your produce and sunflower seeds. While that’s cleaning, begin boiling your orzo pasta. Once it’s finished, add to a bowl (preferably plastic) and add your seasoning, garlic, rosé vinaigrette, and olive oil. Mix together and set in your freezer while you prepare the vegetables. You can also leave it in your fridge if you don’t plan on eating it right away.

In a large bowl, prepare your veggies! Chop up your cucumber, celery, green onions, tomato, and spinach. Add your shaved carrots and season everything to your liking.

After this, check on your orzo and stir it up in the bowl. Place back in freezer.

Chop up your asparagus and sauté it in a pan. Season to your liking. I did salt, pepper, paprika, garlic, and everything but the bagel seasoning.

Once the asparagus is complete, add it to the large veggie bowl. Add the rosé vinaigrette and olive-oil dressing. Mix well.

Grab your orzo out of the freezer. It should be cold enough to add to your salad. I will say that this salad is DELICIOUS even without the orzo. I just love pasta.

If you plan to meal prep this, you can either mix everything together (minus the spinach) and just put the spinach on top of the pasta so it doesn’t get soggy, or you can just have the dressing set aside in a separate container.

I realize I didn’t give exact measurements. I made this pasta for myself and got two servings out of it. Roughly, I used about a handful of sunflower seeds, two stalks of celery, 1/4 a cucumber, two stalks of green onions, one tomato, a handful of shredded carrots, 15 pieces of thin asparagus, and a 1/3 of a bag of spinach.
