Potato Leek Soup

Hello, lovelies!

With the weather getting colder, there’s nothing better than a homemade bowl of soup to keep us warm and our immune systems healthy.

Today’s recipe is super quick and easy! Mine is done a little differently than the classic version.

All you’ll need is:

  • bag of baby potatoes
  • 1-2 stalks of leeks
  • vegetable broth
  • minced garlic
  • salt, pepper, thyme, everything but the bagel seasoning, and 21 seasoning

Starting off, you’ll want to cut up your leeks! I used one stalk, but you can never go wrong with too many leeks, in my opinion. Then, throw them in a large pot (don’t turn the heat on just yet!)

Next, grab your bag of baby potatoes. I used the baby dutch potatoes from trader joes and it was the perfect amount!

Cut and dice your potatoes. Leave them aside for now.

Go back to your pot and turn on the heat to medium. Add a healthy serving of minced garlic and mix it all together. After a couple of minutes, add the diced potatoes and the vegetable broth.

Add the seasonings to the soup and turn the heat high. Cover with a lid and let it start to boil.

Once it’s boiling, turn the heat down and let it simmer to allow the potatoes to soften.

Once the potatoes are softened, you have two choices! Add the soup to a blender (but leave the hole at the top open to allow heat to escape) to get everything nice and smooth. Or, grab a potato masher and begin mashing everything in the pot as best as you can.

I would have preferred the first method, but I don’t have the correct blender to allow the heat to escape! But, the soup was still incredibly delicious without it.

After everything is mashed and heated through, your soup is done!

This recipe provided four servings of soup. You can always double if you need more!
