Spinach Balela Salad

This salad right here!!!!! My absolute favorite of all time. It’s so good that it deserves its own unique name, but ‘Spinach Balela’ will have to do for now.

All you’ll need is:

  • baby spinach
  • brussel sprouts
  • baby cauliflower
  • roma tomato
  • red onion
  • avocado
  • balela
  • minced garlic
  • nutrional yeast
  • pine nuts
  • micro greens
  • everything but the bagel seasoning
  • 21 seasoning solute
  • salt
  • pepper

all ingredients were purchased at Trader Joe’s.

Let’s Get Started

Chop up your brussel sprouts, baby cauliflower, red onion, and half of the roma tomato. Sauté them with a little oil of your choice and season them with 21 seasoning solute and everything but the bagel seasoning. Add minced garlic and nutritional yeast as well.

Once that’s done, set it aside to cool down for a bit while preparing the rest of the salad.

Get a large bowl and fill it with spinach. I prefer to chop it up a little and add a sprinkle of salt and pepper to the greens.

Next, add the micro greens and balela. The oil from the balela will act as the salad dressing.

Next, I like to make a circle in the middle of the salad to add in the sautéed veggies. This makes sure that the heat from the veggies won’t make the spinach shrivel up.

The final steps are to add diced avocado (seasoned with everything but the bagel), pine nuts, and the other half of the diced roma tomato.

Et voila! You have the best salad ever! It’s refreshing, tasty, and filling! I hope you give this one a try and let me know what you think!
