You already know what we’re getting into! All ingredients used are from Trader Joe’s.
You’ll need:
- vegan marshmallows
- virgin coconut oil (or vegan butter)
- organic crisp rice cereal
- vanilla bourbon extract
- parchment paper
Begin by grabbing a medium-sized pot and adding 1/4 cup of coconut oil. Turn the heat to medium.
You’ll want to cut the marshmallows in fours. You’ll use the entire bag!
Add the cut marshmallows to the pot and let it start to melt down. It won’t get 100% melted the way non-vegan marshmallows do, but they will mix with the cereal just fine.
Add a dash of vanilla bourbon extract for some extra flavor and mix it with the marshmallows.
Grab a wooden spoon and begin slowly adding the cereal to the mix. Folding it over rather than mixing it in. Keep adding cereal until you’re satisfied. I used about half the cereal box.
Once it’s ready, lay parchment paper out on a baking sheet and add the rice krispy mix on top. You can make it as flat or as thick as you want.
Let it sit out at room temperature for 30 – 45 mins and then cut into bars.
These came out so good! I prefer them over regular rice krispy treats any day. My non-vegan family was also loving them! Enjoy 🙂
