I’m going to share with you how I make healthy banana pancakes! This is my go-to breakfast. I’ve never been a huge pancake person… there’s no real reason why. But banana pancakes have stolen my heart! And no, we’re not just adding bananas to pancake mix!
It’s so simple, tastes great and is a healthier option than regular pancakes. All you’ll need is:
- 1 banana
- ½ a cup of uncooked oats
- 2 eggs
- Cinnamon powder
- Vanilla power (if your banana isn’t too sweet)
- Fresh fruit of your choice
I start by peeling my banana and mashing it up in a bowl with a fork. Mash it reeeealll good!
I then add 1 egg and mix the two ingredients together. Next, I toss in the uncooked oats and mix everything again. Once it’s all mixed well, I add the second egg.
Add some cinnamon powder and vanilla powder, however much you’d like. Mix all the ingredients together one last time and heat up your pan!
* If you want to make them mini pancakes, you can achieve this by using a spoon to pour the mixture into the pan and they’ll be the perfect tiny size.
Once they’re all golden brown and beautiful, they’re done! I personally don’t like syrup so instead I just add fresh fruit on top to satisfy my sweet tooth. And since I’ve never tried it with syrup, don’t get mad at me if you try it don’t like that combination!
This serving size does make quite a lot of pancakes, but because this version isn’t as heavy as regular pancakes, I eat the entire serving and it’s the perfect amount to leave me feeling satisfied.
