This recipe is so quick, easy, and delicious!
What You’ll Need:
- ciabatta buns
- spinach
- shiitake mushrooms
- cauliflower florets
- vegan buffalo dip
- minced garlic
- everything but the bagel seasoning
- 21 seasoning
- pepper
- olive oil
*All ingredients are from Trader Joe’s*
How It’s Made
Begin by slicing the cauliflower florets (similar to how you’d slice a tomato). Cut enough of them to have one layer of cauliflower on the sandwich.
Cut the stems off your shiitake mushrooms. Also have enough to create a second layer on the sandwich.
Add your vegetables to a pan on medium heat. Lightly drizzle your olive oil and add your seasonings.
Flip the vegetables over once one side gets browned. Add your minced garlic to the pan.
Slice your ciabatta bun in half and toast it.
Once the buns are ready, add the vegan buffalo dip to one half of the sandwich.
Add your veggies to the bun once they’re ready. Top off the sandwich with a healthy serving of spinach. Add the other half of the bun on top and voila! It’s ready.
I was really surprised with how good this sandwich came out! I’ll definitely be making it more often.
